Adapted from How Sweet It Is recipe for Snicker-Chip-Doodle Cookies and Red Velvet Brownies

1/2 cup unsalted butter (at room temperature)

1 cup granulated sugar

3 Tablespoons cocoa powder

2 Tablespoons red food coloring

1 egg

2 teaspoons vanilla

1 3/4 cups all-purpose flour

1/4 teaspoon salt

1/2 teaspoon baking powder

2 tablespoons milk (just in case)

1/3 cup white chocolate chips

Granulated sugar (for rolling)

Combine the flour, salt, and baking powder in a bowl and set aside.  In a small bowl mix together the cocoa powder, red food coloring and 1 teaspoon of the vanilla, then set aside (you will add this mixture to the butter and sugar in a minute). Cream butter and sugar in a mixer till fluffy (5 min or so) and then beat in the red cocoa mixture and that other teaspoon of vanilla.  Then beat in the egg.  THEN you can slowly incorporate the dry ingredients (adding milk if the dough is too dry) and fold in the white chips.  Refrigerate dough for at least 30 minutes.

Preheat oven to 375 degrees.  Roll cookie dough in sugar and bake for 8-10 minutes.
