Pumpkin Pizzelles

Happy Thanksgiving you all!  I hope you are sitting by the fire, serenaded by Dean Martin with an exhausted dog (or mop, we can’t always tell which it is) cuddling around your feet.  Oh well he just walked away (I’d be miffed if my human called me a mop too).  Much love here.

Today was delicious, care for a taste?

Pumpkin Pizzelles (because you haven’t had enough pumpkin-flavored things yet.)

1/4 cup pumpkin

1/4 cup melted butter

3/4 cup sugar

3 eggs

1 3/4 cups flour

1 1/2 teaspoons baking powder

1 1/2 teaspoons cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ground cloves

Combine the first 4 ingredients in a mixer on medium/high for 2 minutes.  In a separate bowl combine the dry ingredients and then add to the sugar mixture and beat just till everything’s evenly distributed.  Refrigerate dough for at least 1 hour prior to the ironing.  Use your local pizzelle iron as safety instructions detail and enjoy with some tea.
