Blueberry Lime Crumble Pie

Ran out of lemons.  Found a lime=problem solved!

Also, who names a blog ‘The Blueberry Days’ and has more recipes including peanut butter and red food coloring than blueberries? Someone doesn’t know how to classify information. Weirdo.

Eat this just like so.  Frozen blueberries covered in lime juice and sugar…Oh take me to the springtime.

(Not really, we do not like spring/summer FYI. We do not.)

Blueberry Lime Crumble Pie

1 pie crust (you can just cheat and use the store bought kind, or make your own like Your’s Truly did, but then wish you had just made it easier and used pre-made.  your call.)

4 cups blueberries (I used frozen, though summer fresh would be great surely.)

3/4 cup sugar

juice of 1 lime and zest

1 tablespoon flour

Crumble Topping:

5 tablespoons cold butter, cut into cubes

1/2 cup flour

1/2 cup oats

3/4 cup sugar

1 teaspoon almond extract

pinch salt

Preheat the oven to 375 degrees.  Press pie dough into a pie plate.  Combine blueberries, lime juice, zest, sugar, and flour in a bowl.  Set aside and then make the crumble topping by combining the flour, oats, sugar, salt, and then cutting in the butter.  Pour the blueberries into the pie shell and then pour the crumble topping over.  Bake for 45 min, keeping an eye on the top and crust as to not over-brown.
