Spinach Pesto Soup

Another craving recipe here, really wanted pesto but not just on pasta.  This might be my new favorite soup!  Really easy and delicious-great way to eat lot’s of spinach and not get cranky.

Spinach Pesto Soup

4 tablespoons basil pesto

1 onion, chopped

1 bag baby spinach, chopped

1/2 cup orzo pasta

2 (15oz) cans white beans (Great Northern)

4 cups low sodium chicken broth

salt/pepper to taste

In a soup pot saute the onions in some olive oil (2 tablespoons) for about 2 minutes or till lightly browned.  Add spinach and pesto with a splash of broth, cook down for 3 minutes till spinach is fully wilting.  Add the beans and rest of the broth, salt and pepper to taste. Bring to a boil then add the orzo and cook another 5 minutes.
