Red Pepper Black Bean Salad

1 (15oz can) black beans, drained

1 (15oz can) chickpeas, drained

3/4 cup frozen corn (but I’d have preferred to use fresh here)

3 tablespoons olive oil

juice and zest of one lime

1 teaspoon cumin

1 pinch crushed red pepper flakes

1/2 to 1 teaspoon salt

1 teaspoon dried cilantro (but if you have access to fresh use it!!)

1/2 large onion, chopped finely

1 red bell pepper, chopped

Mix the olive oil, lime juice, zest, spices, and salt in a large bowl.  Add the remaining ingredients and toss to combine.  Refrigerate overnight for maximum flavor and enjoy chilled.
