Orange Ginger Cake

2/3 cup yogurt or applesauce (I used applesauce but in the future I’ll be using yogurt)

3/4 cup sugar

1 egg

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 3/4 cups flour

1/2 cup fresh orange juice

zest of one orange

1-2 tablespoons minced crystalized ginger

For the Glaze:

1/2 cup sugar

1/2 cup water

zest of 1 orange

2 tablespoons minced fresh ginger

Combine dry ingredients in a bowl and set aside.  Combine yogurt, and sugar in mixing bowl and beat for 2-4 minutes till sugar is well combined and a little dissolved, add egg.  Add vanilla, and then dry ingredients alternating with orange juice.  Pour into 9-inch round pan and bake at 375 degrees for 30 minutes or till toothpick comes out clean.  

For the glaze bring all ingredients to a boil till sugar dissolved then pour over cooling cake.  Let sit for 15 min.
