And now the good stuff! Maybe I should’ve started with cookies to reel ya back in first instead of scaring you right off the bat with a long “life post”. Well kudos to you if you’re still sticking around, these are for you darling!
Peanut Butter Bacon Cookies
1/2 cup softened unsalted butter
1/2 cup peanut butter
2/3 cup packed brown sugar
1/3 cup granulated sugar
1 egg+1 egg white or yolk (you basically need 1.5 eggs)
1 teaspoon vanilla
1 3/4-2 cups cup flour
1/4 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
6 slices crumbled bacon (pre-cooked, I bake mine in the oven, 20 min at 400 degrees)
1/2 cup cinnamon chips
1/2 cup peanut butter chips
Preheat the oven to 350 degrees. Cream together the butter, peanut butter, and sugars till fluffy-about 5 minutes. Meanwhile in a separate bowl combine the flour, baking powder, baking soda, and salt. Back to the butter/sugar mixture, after it’s fluffy beat in the egg and vanilla another 2 minutes at medium high speed. Then gradually add in the dry ingredients, mixing just till combined. Finally, stir in the bacon and peanut butter+cinnamon chips. Drop by spoonfuls onto a greased cookie sheet and bake for 10 minutes till golden brown. Enjoy many.
